Ingredients for 4 people:
• 10/12 bunches of robinia flowers
• 8 tablespoons flour
• 200 ml sparkling water
• Seed oil for frying, as required
• Salt, as required
Make the batter by gradually whisking the sparkling water into the flour in a low bowl, keep stirring to avoid lumps. The batter should be neither too thick nor too runny.
In a frying pan bring the oil to a temperature of 180° C.
Dip the flowers in the batter, making sure they are well covered, then drop them into boiling oil. Fry until golden brown.
Rest them on some kitchen paper, sprinkle with salt to your liking and serve nice and warm. If you prefer a sweet version, use icing sugar instead of salt.
